Beef and Barley Stew - Slow Cooker Recipe

Ready for another easy and delicious recipe?!  I recently discovered some awesome new seasoning mixes for your Slow Cooking pleasure!  They are called "Crock Pot Seasoning Mixes" and they come in three varieties; BBQ Pulled Pork, Savory Pot Roast and Hearty Beef Stew.  They are incredibly easy to use and are super yummy too!  

I recently used the Hearty Beef Stew Mix to make a scrumptious Beef and Barley Stew.  It was SOOOOO easy and SOOOO good!  I can't wait for you to try it!

This all comes together super quick and is full of good-for-you things.  You can find the Crock Pot Seasoning Mixes at major Grocery Stores and Target Stores Nathionwide!

Beef and Barley Stew

Ingredients:
1 small onion, minced
3 carrots, peeled and chopped
2 stalks celery, chopped
1 cup baby bella mushrooms, sliced
1 cup frozen green beans
1.5-1.75 lb. Beef Stew Meat, cut into bite-sized pieces
1/2 cup pearl barley
2 pkgs. Hearty Beef Stew Crock-Pot Seasoning Mix
6-7 cups Water 

Directions: (You will need a 5  Quart or larger Slow Cooker for this) 
In the bottom of your crock, place the onions, carrots, celery, mushrooms and green beans. Place the stew meat and barley on top of that. Lastly, dump in the 2 seasoning packets and the water.  Add enough water to just cover all the contents. Cook on LOW for 8-10 hours or on HIGH for 4-5 hours. ENJOY!

Additional suggestions..
1) brown your beef stew meat, this will give more flavor and browning to the gravy...
2) whenever you slow cook with beef or venison, add a slice of wheat bread and butter one side with Dijon mustard..this will dissolve during the slow cooking and acts as a binder/ thickener for the gravy...

I know you are well intentioned but many of your recipes use high salt and additive ingredients. For example the crock pot seasoning mix is very high in sodium. I would look forward to innovative crock pot recipes that use less of these things. Other than that keep writing.

Bloomfield, I appreciate your input, but I cook a lot of other recipes that do not contain these ingredients. I would encourage you to explore my blog and check it out. You can always substitute for your own dietary needs. I watch my sodium intake, therefore, I do not cook recipes like these all the time. Everything is ok in moderation.
